We have been trying to get our grocery budget back under control, despite the high prices at the store. Since we’ve been spending a small fortune in meat recently, I’ve decided to make at least two nights a week meat free. Of course that leaves the challenge of finding tasty, protein rich dishes to cook. This week I stumbled across this recipe for bean cheese and rice squares. It sounded easy enough and since it had a few eggs in it in addition to the beans, I knew it would make a pretty filling dish.
On top of it, the recipe called for cheese on top, and since my family loves just about anything covered in cheese, I figured this was a good bean recipe for us to try. We are not usually very big into beans other than the occasional can of baked beans. It all turned out great. I added a green salad and we were all set for dinner. I guess everyone liked it, since we didn’t have a single crumb left over.
